Pumpkin Spice Cake with Cream Cheese Frosting

Ingredients:

  • 4 large eggs
  • 2 cups sugar
  • 1 cup vegetable oil
  • 1 (15-ounce) can pumpkin
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1/2 cup chopped toasted walnuts
  • cream cheese frosting
Makes 15 servings
Combine first 4 ingredients in large bowl. Beat at medium speed with an electric mixer until smooth.

Combine flour and next 6 ingredients. Stir flour mixture into pumpkin mixture until well-blended. Spread batter in a lightly greased 15" x 10.5" jelly-roll pan.

Bake at 350 degrees for 25 to 30 minutes or until lightly browned. Cool completely in pan on a wire rack.

Spread cream cheese frosting evenly over cake. Sprinkle with walnuts.


Cream Cheese Frosting

Ingredients:

  • 1 (6-ounce) package cream cheese, softened
  • 1 cup butter, softened
  • 2 teaspoon vanilla extract
  • 4 cups powdered sugar
Makes 3 cups
Beat first 3 ingredients at medium speed with an electic mixer until creamy. Gradually beat in powdered sugar until smooth.
